Sweet & Spicy Glazed Quail


  • 1-cup citrus juice
  • 1/3 cup bourbon
  • 2 cloves garlic
  • 1 teaspoon chopped ginger
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 2 teaspoons Sambal
  • Quail
  • Vegetable Oil
  • Flour
  • Salt & Pepper


Add the juice, garlic, ginger, soy, honey, brown sugar and Sambal in a pan, bring to a medium simmer and reduce by 1/3.

Season the quail with salt and pepper lightly dredge in flour and saute in vegetable oil until golden brown. Drain on paper towels and finish in oven.

To finish, place quail in saute pan, add glaze and bourbon toss and garnish with chives.
