Orange Carrot Soup


  • 3 cups carrots (med dice)
  • 1 onion (med dice)
  • 2 cups chicken broth
  • 2 cups orange juice
  • 1/3 cup honey
  • 1 teaspoon nutmeg
  • 3 tablespoons butter
  • salt & pepper


Sweat your onion in the melted butter until translucent. Add carrots, chicken stock, orange juice and honey. Bring to a boil and reduce to a simmer. Puree and season with salt, pepper and nutmeg. Garnish with orange zest and cream.
